Rose Water Coconut Mango Lassi Recipe!

Rose water mango lassi recipe! Sometimes you just want to sit around sipping exotic drinks while dreaming & planning future adventures (hello Amsterdam in April!).  This lassi recipe will help make those plans taste even sweeter and it’s super simple; mega-bonus points in my book!

Rose water Coconut Mango Lassi

Makes 2 servings


2 mangos, as ripe and fragrant as you can find

1/2 cup buttermilk

1/2 cup plain yogurt, or Greek if you want the lassi extra thick

1/4 cup coconut milk

1 tsp rosewater

1 tsp honey or sugar

1 big pinch of cardamom

*possibly coconut water or regular water to help reach the desired consistency

1/ Peel and pit the mangos, then chop into pieces.

2/ Put all the ingredients in a blender.  I think its a good idea to put the mango chunks in first, followed by the yogurt, your sweetener of choice, then the liquids, and the cardamom last.  This increases the amount of honey/sugar/cardamom actually going into your lassi, instead of getting stuck in the bottom of the blender.  Set the blender to high.

3/ Blend, baby blend! …until smooth and frothy.  If the lassi is too thick, add coconut water (or regular water if you don’t want so much coconut flavor) until you reach the desired consistency. If it’s too thin, add ice cubes or more yogurt to thicken things up!

4/ Divide amongst your drink glasses…or coconut halves 😉

5/ Garnish with coconut shavings and find a nice place to sip and relax!
